Laurent grew up in Versailles where he quickly discovered his passion for cooking, helped by his great grandmothers; one developing his savoury palate and the other his sweet palate!
At 17 he served an apprenticeship at the hotel school in Versailles, then worked for five years in Michelin starred restaurants: Auberge de la gentilhommière; Auberge des Bruyères; Auberge de la Poularde.
Loving travel, he worked in Marbella, Spain for 4 years, where he became a head chef in the five-star Don Miguel Hotel Restaurant. He then decided to move to Lanzarote where he lived for 23 years, working in starred restaurants. Laurence is now a well-travelled chef who loves his craft.
His taste for travel called him again and he decided to combine his profession with sailing. After working for two years on a 67’ catamaran and then a 74’ motor yacht, two transatlantic crossings, and the discovery of the Antilles and West Mediterranean, he has now joined FIREFLY.
